The Gluten-free Almond Flour Cookbook
The prevalence of celiac disease and gluten sensitivity among millions of adults and children has created the need for gluten-free recipes that are as nutritious and tasty as their traditional counterparts. Popular food blogger Elana Amsterdam offers ninety-nine family-friendly classics-from Pancakes to Eggplant Parmesan to Chocolate Cake-that feature her gluten-free ingredient of choice, almond flour. Because these recipes are low glycemic, low in cholesterol and dairy, and high in protein and fiber, they are also ideal for people with diabetes, obesity, and high cholesterol. So whether you're looking for a quick breakfast treat, a comfort food entrée, or a showstopping dessert, The Gluten-Free Almond Flour Cookbook proves that gluten-free cooking can mean healthy eating for everyone.

I first stumbled across Elana's recipes on her website which led me to this cookbook. I've tried more than several of her recipes and they are good! Not just tolerable but tasty. I also like that Elana focuses on eating healthy as well as gluten free. She does insist that you purchase a certain brand of almond flour (available online) and that other brands such as Bob's Red Mill will not work. She means what she says too. I purchased almond meal from the bins at Whole Foods and my pancakes were horrible but absolutely yummy when I used the recommended flour. I definitely recommend this cookbook!!

After going from a high protein diet (The 7-Hour Diet) and transitioning over to the paleo way of eating (and losing 30 lbs in the process since April 1, 2012!), I was missing foods like pancakes and breads. I have made three recipes from this book and I must say, THEY WERE AWESOME! My husband gave all three of them two thumbs up! We have tried a different pancake recipe in the past and it was edible, but not our favorite. The pancakes I made this morning from this book were even BETTER than homemade pancakes I've made in the past. And the zucchini bread is so yummy. Great book for those who are gluten-free or following the paleo way of eating.

Cute little book. It is good that library has this book because I would not buy it. Many recipes are similar. You can also get other recipes from author's website.

Elana's site is called elana's pantry and it has a ton of recipes. A great place to get gluten free flours in at New Generation Foods on Edmonds in Burnaby. They are not an organic, whole foods type place and that is why the prices are amazing!!!
They have organic flours too and a HUGE selection of flours, teff, rice, oat, kamut, chickpea, sorghum, millet, quinoa, etc.
We got our almond flour in the states in bellingham from

we got a 5lb bag for about $35 canadian- totally worth it!
